    Pistachio Cream Chocolate Chip Cookie; Mozzarella Pizza Bagels

    These cookies were really good! The browned butter with the pistachio cream in the center and the fresh milled flour were the perfect trifecta to a great cookie. Most definitely going to make these again. I made some mozzarella bagels this weekend and feel like my bagel recipe is perfect! Finally!!!! These bagels turn out soft on the inside with a nice crunch on the outside. Every bite is delicious. We’ve come a long way baby.

    Try the “Twist and Seal” Method for Shaping Bagels; Croissant Cinnamon Rolls; Tiramisu Cookie

    Lord knows I have tried every way to shape a bagel. Poke, roll, twist, etc. The poke method works fine, but it doesn’t give that professional bagel look. The roll method is preferred, but I always would struggle with keeping the seams connected until the final bake. Usually, during the boil, the seam would fall apart. Well, I created a new technique called the “twist and seal”. Once you have your twisted/rolled bagel, bring the two ends together, pinch them together, and then twist the bagel just at that seam.     Cinnamon Rolls Done Different; Cinnamon Raisin Bagels; Chocolate Oreo Cookies

    This week I wanted to play around with my cinnamon rolls. I found a new recipe that was similar to the one I typically use, but also a smidge different. Both recipes use a yudane, or tangzhong as well as a stiff starter. The new recipe uses brown sugar instead of granulated sugar and includes eggs. My usual recipe does not include eggs.     Saturday Market #2 : 6/13/26

    Here we go again! What a blast! The second round at the market was awesome! We had all the usual goodies: English Muffins, Loaves of bread, tortillas, hamburger buns, cookies, cinnamon rolls, Cinnamon Toast Crunch, bagels, and scones. New to the market this round: Blueberry English muffins, everything bagels, chocolate chip scones, s’more cookies.

    Happy 12th Birthday; Sourdough Discard Custard-Filled Donuts

    From start to finish, these beauties were a blast to make. Simple, yet challenging. I don’t fry a lot, so that was something different and exciting. I used this recipe from bakewithjamie.com. Have fun and try it out! I did a 1:1 conversion of the flour, using 425g of fresh milled flour in place of the AP flour in the recipe.

    Magnum Ice Cream Bars; S’more Cookie

    What a treat these ice cream bars were! I couldn’t find ladyfingers to make these a true tiramisu bar, so instead we turned them into Magnum ice cream bars. Easy to make and enjoyable to eat. I am ramping back up for my second market next weekend, 6/13/26. This weekends bakes will include regular English muffins, hamburger buns, double chocolate bagels, 4 loaves of bread, and more cookies! I attempted a S’mores cookie.     Blueberry English Muffins; Double Chocolate Sourdough Bagels; Sour Cherry Pecan Brown Butter Oatmeal Cookie

    I decided to attempt some blueberry English muffins. I used my usual fresh milled English muffin recipe. Instead of the 300g of milk, I used 150g of milk and 150g of blueberry juice. Then, during the stretch and folds, I added some dried blueberries. These turned out fantastic and I will be adding these to my Saturday market rotation.     Here’s what I baked and had on hand at the market: 80 individual cookies 40 scones-strawberry chocolate and blueberry lemon 42 English muffins 42 hamburger buns 42 tortillas 16 loaves of bread 39 bagels-8 blueberry; 7 strawberry; 12 asiago; 12 cinnamon crunch 24 cinnamon rolls 6 bags of cinnamon toast crunch What a great time! We ended up selling out of everything except 1 loaf of bread, 8 cookies, and some bagels! It was a successful first outing, in my opinion.     Saturday Market Prep Has Begun!

    I am so excited, yet nervous, for my first ever Saturday Market!!!!!! May 23 is coming quickly. I have gone over and over my baking schedule and prep timing in an attempt to not overwhelm myself. I want everything to be fresh and perfect. However, I know there will be some hiccups, and that’s ok. My menu will include: sandwhich loaves, English muffins, scones, bagels, cookies, tortillas, hamburger buns, cinnamon rolls, and cinnamon toast crunch cereal.     Key lime pie cake, but cupcakes; Pretzels; Tortillas, Chocolate chip M & M cookies

    Well, the key lime pie cake from last week was a huge success. This week, we are turning them into cupcakes! I halfed the recipe and used 195g of flour. I made the graham cracker crust first, baked it for a few minutes and then added the cake mixture. These were topped with buttercream frosting, graham cracker crumbs, and lime zest. So good!
